Kvass drink
Recipe for Kvass:
Ingredients:
- 8 cups water
- 1 cup dark rye bread
- 1/4 cup honey
- 1/4 cup raisins
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon caraway seeds
- 1 teaspoon dill seeds
- 1 teaspoon black peppercorns
- 1 bay leaf
- 1/4 cup lemon juice
- Fresh herbs for garnish (optional)
Instructions:
1. In a large pot, bring the water to a boil over high heat.
2. Cut the rye bread into small cubes and add them to the pot. Reduce the heat to low and let the mixture simmer for 10 minutes.
3. Remove the pot from the heat and let it cool down for 5 minutes.
4. Strain the mixture through a fine mesh strainer, pressing on the bread cubes to extract as much liquid as possible. Discard the bread cubes.
5. Pour the strained liquid back into the pot and add the honey and raisins. Stir until the honey is fully dissolved.
6. In a small pan, heat the olive oil over medium heat. Add the salt, caraway seeds, dill seeds, black peppercorns, and bay leaf. Toast the spices for 1-2 minutes, until fragrant.
7. Add the toasted spices to the pot with the liquid and stir to combine.
8. Cover the pot and let the kvass ferment for 2-3 days in a cool, dark place. The longer you let it ferment, the stronger the flavor will be.
9. After 2-3 days, strain the kvass through a fine mesh strainer to remove any solids. Stir in the lemon juice.
10. Serve the kvass chilled, garnished with fresh herbs if desired. Enjoy your homemade, refreshing and nutritious drink!
